6 Minute Elote en Vaso (Mexican Street Corn)

Have you ever had a spoonful of heaven? Well, if you can say that without having ever tried Elote en Vaso, you're LYING.

This is a quick and easy alternative to the real deal, and it can be done in just about 6 minutes, with items you're likely to have in your kitchen anyway.

 

Prep Time: 3 Minutes | Cook Time: 3 Minutes | Total Time: 6 Minutes


Ingredients (US Standard)

  • 1 (15.25oz) can Whole Kernel Golden Corn, drained

  • 1 tbsp Butter

  • 1 tbsp Cayenne, optional (Substitute with Mexican Chile Powder for more authentic flavor - suggestions include Tajin or La Fina)

  • 1/4 cup Sour Cream (substitute with Mexican Crema for a more authentic flavor)

  • 1/8 cup Queso Fresco, crumbled (or more, to taste)

  • Mexican Salsa of choice (drizzle to taste) ( I recommend Bufalo salsa, or something similar), optional

  • Juice of 1/2 Lime (or sub with 1 tbsp of bottled Lime Juice), optional

Ingredients (Metric)*

  • 1 (432g) can Whole Kernel Golden Corn, drained

  • 14g Butter

  • 5.3g Cayenne, optional (Substitute with Mexican Chile Powder for more authentic flavor - suggestions include Tajin or La Fina)

  • 60g Sour Cream (substitute with Mexican Crema for a more authentic flavor)

  • 28g Queso Fresco, crumbled (or more, to taste)

  • Mexican Salsa of choice (drizzle to taste) ( I recommend Bufalo salsa, or something similar), optional

  • Juice of 1 Lime (or sub with 15mL of bottled Lime Juice), optional

*All metric units are converted and should be considered more or less.


Method

  1. Add drained corn to a large microwave-safe bowl. Microwave, covered, for about 3 minutes. Caution: Remove bowl with potholders, it will be very hot.

  2. In separate bowl, melt butter in microwave. 30-60 seconds. Caution: Remove bowl with potholders, it will be very hot.

  3. Add melted Butter, optional Cayenne and optional Lime to the corn. Stir with spoon to combine well.

  4. Top the corn with sour cream. Use spoon to spread into one even layer.

  5. Sprinkle crumbled Queso Fresco on top of sour cream.

  6. Glaze with bottled Mexican Salsa. Serve immediately.
