Creamy Bean Soup (Crema de Frijoles)

This soup is perfect as an appetizer when the weather is cold. Filled with vegetables, it's nutritious, too! A lot of the components are also part of our Chilorio recipe. That means if you enjoyed the Tacos de Chilorio, you'll love this as well!


Note: This recipe calls for boiled Mayocoba beans. For instructions, please refer to our "How to Boil Beans" recipe. Alternatively, you may use a canned variety.

 

Prep Time: 5 Minutes | Cook Time: 30 Minutes| Total Time: 35 Minutes


Special Equipment

  • 1 Large Pot

  • 1 Blender

  • 1 Cutting Board

Ingredients (US Standard)

  • 1 1/4cup White Onion, sliced

  • (2) Divided Measurements of 3/4 Cup Water (1 1/2 cups total)

  • 4 Cups Mayocoba Beans, boiled (Or substitute with 2 (16oz) cans Mayocoba/Peruvian/Canary Beans that are drained and rinsed)

  • Two Roma Tomatoes (about 1 and 1/2 cups sliced)

  • 7.4oz box Tomato Sauce (Due to added seasoning, we recommended "Del Fuerte" brand)

  • 2tbsp Chicken or Vegetable Bouillon (try Better Than Bouillon for MSG-Free)

Optional Ingredients

  • 1 Serrano Pepper (or half of a Habanero)

  • 1 tbsp Minced Garlic

  • Queso Fresco, to taste

  • Tortilla Chips, to taste

Ingredients (Metric)

  • 200g White Onion, sliced

  • (2) Divided Measurements of 177 mL Water (354 mL total)

  • 580g Mayocoba Beans, boiled (Or substitute with 2 (16oz) cans Mayocoba/Peruvian/Canary Beans that are drained and rinsed)

  • Two Roma Tomatoes (about 200g)

  • 210g Tomato Sauce (Due to added seasoning, we recommended "Del Fuerte" brand)

  • 2tbsp Chicken or Vegetable Bouillon (try Better Than Bouillon for MSG-Free)

Optional Ingredients

  • 1 Serrano Pepper (or half of a Habanero)

  • 15g Minced Garlic

  • Queso Fresco, to taste

  • Tortilla Chips, to taste


Method

  1. Add 3/4 cup (177mL) Water, Onion, Roma Tomatoes, Tomato Sauce, Bouillon, and optional Pepper and Garlic to blender. Blend until well combined.

  2. Pour Tomato mixture into a large pot.

  3. Now add Beans and remaining 3/4 cup (177 mL) of Water to empty blender. Blend until combined into a smooth puree.

  4. Pour blended beans into the large pot with the tomato mixture.

  5. Heat on Medium, and stir ingredients in pot until well combined. Cook for 30 minutes, stirring occasionally.

  6. Serve with optional toppings (Queso fresco or Tortilla Chips) and enjoy while hot!
