No-Knead Banana Bread

This Banana bread is easy and bakes more like a cake - which means there's no kneading. It is a delicious and nutritional option that can be customized to fit your taste. Bake a loaf of Blueberry or Walnut Banana Bread for a cozy breakfast, or prepare a batch with Chocolate Chips for an indulgent dessert. This recipe is adaptable to any add-in you choose, so get creative!

 

Prep Time: 15 Minutes | Cook Time: 65 Minutes | Total Time: 80 Minutes


Special Equipment

  • 1 bread pan (typical size - about 8.5"x4.5")

  • 1 medium bowl (for dry ingredients)

  • 1 large mixing bowl (for wet ingredients)

  • 1 Electric Hand Mixer

  • 1 potato masher (or fork) for bananas

Ingredients (US Standard)


Dry Ingredients

  • 1 - 3/4 cups White Whole Wheat Flour (or substitute with plain all purpose flour)

  • 1 tsp Baking Soda

  • 1/2 tsp Salt

  • 1 tsp Ground Cinnamon, optional

Wet Ingredients

  • 2 eggs, room temperature (Note: to achieve room temperature, crack eggs into bowl and let sit for about 30 minutes)

  • 1/2 cup Melted Coconut Oil (or sub with Olive Oil)

  • 1/3 cup Honey (or sub with Maple Syrup)

  • 1/4 cup Unsweetened Vanilla Almond Milk (or sub with regular Milk, or Plain Nonfat Greek Yogurt - yogurt mill result in less moist bread)

  • 2 tsp Vanilla Extract

Additional Ingredients

  • Cooking Spray

  • 3 Medium Bananas, ripened and turning brown. (The more ripe they are, the more moist and sweet the bread will be)

  • 1/2 cup of Add-In of choice (I.E. Chopped Walnuts, Frozen Blueberries, Chocolate Chips, Raisins, Chopped Frozen Strawberries, etc.) *Note: If you are adding frozen fruit, do not thaw. Keep frozen and toss with 1tbsp flour right before adding to mixture to prevent fruit from sinking to the bottom*

Dry Ingredients

  • 210g White Whole Wheat Flour (or substitute with plain all purpose flour)

  • 4.8g Baking Soda

  • 2.8g Salt

  • 2.6g Ground Cinnamon, optional

Wet Ingredients

  • 2 eggs, room temperature (Note: to achieve room temperature, crack eggs into bowl and let sit for about 30 minutes)

  • 120 mL Melted Coconut Oil (or sub with Olive Oil)

  • 56g Honey (or sub with Maple Syrup)

  • 60 mL Unsweetened Vanilla Almond Milk (or sub with regular Milk, or Plain Nonfat Greek Yogurt - yogurt mill result in less moist bread)

  • 10 mL Vanilla Extract

Additional Ingredients

  • Cooking Spray

  • 3 Medium Bananas, ripened and turning brown. (The more ripe they are, the more moist and sweet the bread will be)

  • 1/2 cup of Add-In of choice (I.E. Chopped Walnuts, Frozen Blueberries, Chocolate Chips, Raisins, Chopped Frozen Strawberries, etc.) (please manually convert, as units may vary depending on add-in) *Note: If you are adding frozen fruit, do not thaw. Keep frozen and toss with 7.5g flour right before adding to mixture to prevent fruit from sinking to the bottom*


*All metric units are converted and should be considered more or less.


Method

  1. Preheat oven to 325°F (165°C).

  2. Grease Loaf Pan with cooking spray and set aside for later. Remove excess with paper towel if necessary.

  3. Unpeel the 3 bananas and place on a large plate. Use potato masher or fork to mash bananas into a fine pulp. Set aside.

  4. Combine Dry Ingredients (flour, baking soda, salt, cinnamon) in bowl. Set aside for later.

  5. Beat all Wet Ingredients (eggs, oil, honey, greek yogurt, vanilla) in large mixing bowl, for about 2 minutes.

  6. With rubber spatula or large spoon, stir in the bananas, dry ingredient mixture, and add-ins of choice to the Wet Mixture. Stir only until there is no more dry mixture left.

  7. Pour batter into greased loaf pan. Sprinkle with more cinnamon (optional).

  8. Bake on top rack for 50-55 minutes, or until toothpick / fork inserted comes out clean.

  9. Cool in pan for 10 minutes, then immediately remove. Slice and serve immediately.

Save leftovers in refrigerator for up to 5 days.
