Quesadillas de Huitlacoche


Huitlacoche, or corn truffle, is a delicacy that has its origins in prehispanic Mexico. It has a deep and rich earthy flavor, somewhat akin to what you would find in certain mushrooms. Today you will find huitlacoche as a prized ingredient in many Mexican dishes - one of the most common being tacos and quesadillas.

Special Equipment

  • Cutting Board

  • 2 Frying Pans

Ingredients

  • 1tbsp Coconut Oil (or cooking oil of choice)

  • 1 White Onion, chopped

  • 1 Clove Garlic, minced

  • 2 cups Jarred Huitlacoche (492g)

  • 1/2tsp Salt

  • (20) 4-inch Corn Tortillas (corn is recommended, flour is optional)

  • Queso Chihuahua (or other preferred melting cheese)

Method

  1. Add the cooking oil to a pan on medium heat. Add onions and garlic and saute until onion is transparent and garlic is fragrant, about 3 minutes.

  2. Add the Huitlacoche and Salt to the pan, stirring well to combine with the onion and garlic. Continue to cook on Medium for 10 minutes, stirring occasionally.

  3. In a clean frying pan, place one or two tortillas, depending on how many fit. Set the stove to Low and allow the tortilla to heat for about a minute or two on each side.

  4. Scoop about 1/8 cup (45g) onto one side of the 4” corn tortilla (amount may vary depending on size of tortilla). Also add about 1/8 cup of your melting cheese on top of the huitlacoche.

  5. Fold the tortilla to enclose your quesadilla. Now place it back on the stove, heating for another 2 minutes on each side, or until cheese is melted.
